I didn't notice this until I checked the footage again (timestamped at 19:58). Teams basically get 3 options when they win a coin toss: receive, kick, or defer. And for the opening coin toss, "receive" and "defer" are basically the only two real options that you'd ever want to pick, because if you elect to "kick" then it means that the other team receives the ball for the 1st quarter and also gets to elect to receive the ball in the 3rd quarter.
